BBB Bidassoa Basque Brewery

La idea de crear Bidassoa Basque Brewery nace a principios de 2012 en Estados Unidos, cuna de la cerveza artesanal moderna. Carlos Arrecubieta, doctor en Microbiología e investigador científico de profesión vive en Nueva York, donde desde 2008 elabora una gran variedad de tipos de cerveza artesanal a pequeña escala.

El movimiento emergente de cervecerías artesanales tuvo su origen en Estados Unidos a finales de la década de los 70, pero ha sido en los últimos 10-15 años cuando se ha producido el gran despegue, convirtiendo a EEUU en el país con el mayor número de cerveceras artesanales per cápita. Asimismo, es en EEUU donde se han producido las mayores innovaciones y donde se han introducido los nuevos conceptos de cerveza artesanal, apoyados fundamentalmente por las nuevas variedades de lúpulos cultivadas durante las ultimas tres décadas.

Alentado por la gran acogida que tienen muchas de sus cervezas, Carlos contacta con Scott Vaccaro, maestro cervecero y dueño de Captain Lawrence Brewery, una de las marcas de cerveza de referencia en la Costa Este de EEUU.

Así se establece a partir de 2012 una relación de cooperación entre Carlos y Scott mediante la cual Carlos asesora a la empresa en asuntos de manejo de levaduras y técnicas de laboratorio para mejorar la calidad y reproducibilidad del producto final, mientras que a la vez aprende los entresijos de la producción de cerveza a nivel industrial, aunque manteniendo los parámetros de fabricación artesanal.

Además de la experiencia en la fabricación de cerveza, manejo de materias primas y levaduras, así como en la formulación de recetas, la viabilidad de la empresa requiere incorporar personas de confianza provenientes de diferentes sectores profesionales y con unas aptitudes profesionales complementarias. Por ello, a finales de 2012 se incorporan al proyecto dos nuevos miembros:

Iñigo Pérez: con amplia experiencia tanto en ventas como en el sector de la maquinaria industrial.

Gregorio Villalabeitia: con una dilatada trayectoria en el sector financiero, principalmente en Londres y Madrid.

Bidassoa Basque Brewery es, por tanto, una empresa de fabricación de cerveza artesanal que nace con la misión de ofrecer un producto de calidad, en su mayoría con un marcado acento norteamericano en la elaboración, aunque en parte adaptado a los gustos del mercado del País Vasco, Pais Vasco-Francés y Navarra.
