WIDE AWAKE. Hemos tirado por la vieja escuela para esta West Coast IPA como parte de este serie de IPA’s de contraste. Volvemos a las IPAs clásicas con un carácter más maltoso, bien amargas y un sabor a lúpulo a lo largo de todo el trago. Aquí notamos tanto Simcoe como Citra aportando aromas de pomelo, pino húmedo, limón y algunas frutas tropicales. Una vez más, Centennial hace su trabajo aportando las notas florales y cítricas. Una mezcla más maltosa que la de nuestras más recientes West Coasts, con una mezcla de tres maltas base para dar un poco más de carácter de galleta y esa dulzura clásica que contrarresta y complementa tan bien los altos niveles de amargor.

We have gone real old school for this West Coast IPA as part of this pair of contrast IPA’s. That means citrus, pine, bitterness, some caramalized malt character and a clean dry finish.Going back to classic IPA’s that had a satisfying malt character that interplayed so well with bitterness and the had deep hop character all the way through the sip. Here we see Simcoe and Citra driving aromatics of grapefruit, dank pine, lemon and some bright stone fruit and a hint of tropical fruit. Again, Centennial does it’s job on the hot side through numerous additions laying down the floral and citrus notes. A more malty grist than our more recent West Coasts, this sees a blend of three base malts to give a little more biscuit character and boosted by some light crystal to give that classic sweetness that counterbalances and compliments the high levels of bitterness so well.
