FRACTAL SPECTRUM. Nuestra primera lager de arroz y nos la hemos currado. Utilizando un 30% de arroz crudo del Molí de Pals (Girona), realizamos un macerado de cereales en nuestro hervidor de cerveza para que el almidón estuviera disponible para su conversión en azúcar fermentable en nuestro macerado principal. Este proceso consiste esencialmente en hacer una papilla de arroz y un poco de malta pils antes de añadirla al macerado con el resto de la malta. Y déjame decirte que esto no es sencillo en una cervecería de infusión de estilo inglés. Pero el resultado es que nos permitió hacer una lager increíblemente seca, equilibrada y refrescante que se puede beber durante toda la noche. Ligera y crujiente con una calidad herbal moderada impartida por un producto de lúpulo Simcoe experimental llamado Polyphenol Aroma Hop. No es el típico Simcoe con sabor a pino y a fruta, sino un carácter de lúpulo noble más adecuado para estilos de cerveza más ligeros.
Lanzada en torno al Mash Beer Festival, esta es la cerveza que saciará la sed y relajará el paladar en cualquier momento del día o de la noche.

Our first ever rice lager and we made this one hard for ourselves. Using 30% raw rice from Molí de Pals (Girona) we performed a cereal mash in our brew kettle to make the starch available for conversion to fermentable sugar in our main mash. This process is essentially making a porridge out of rice and some pils malt before adding it to the mash with the rest of the malt. And let me tell you, this is not simple on an English style infusion brewhouse. But the result is that it allowed us to make an incredibly dry, balanced and refreshing lager that can be drank all night long. Light and crackery with a moderate herbal quality imparted from a Simcoe experimantal hop product called Polyphenol Aroma Hop. This is not your typical piney and fruity Simcoe but much more of a noble hop character more suited to lighter beer styles. Released around Mash Beer Festival, this is the beer that will quench the thirst and relax the palate at anytime of day or night.
