County of the Wild is an exceptionally complex Wild Specialty Beer that showcases the rustic elegance of a farmhouse ale through wild fermentation. It presents a vibrant rosé hue, leading with an intense aromatic profile of tart blueberries and raspberries. These fruits are seamlessly interwoven with sharp citrus notes and the distinctive funky character of wild ferments sourced from Penedès wine barrels. Nine months of aging in red wine barrels imparts sophisticated layers of vanilla and toasted oak. The palate is defined by a bright interplay between lactic sourness and red berry esters, culminating in a bone-dry, woody finish with a silky mouthfeel that highlights the expert blending of fruit and barrel.
