Caleya Didgeridoo is a vibrant American IPA that leans into a West Coast profile with a distinct Australian twist. The use of Maris Otter malt provides a sturdy yet subtle toasted-biscuit foundation, allowing the heavy additions of Galaxy and Eclipse hops to dominate the senses. A cold whirlpool of Galaxy drives intense tropical notes of passion fruit and citrus, while the early dry-hopping of Eclipse introduces deep resinous pine and sweet mandarin orange peel. The result is a brilliantly dry and assertively bitter experience, where the clean fermentation allows the complex Southern Hemisphere hop oils to shine through a crisp, refreshing finish.
