This collaborative Specialty IPA balances the rustic complexity of a farmhouse ale with the assertive punch of modern hop varieties. A vibrant bouquet led by Citra and Simcoe provides layers of grapefruit, resinous pine, and tropical fruit, while Nelson Sauvin adds a sophisticated touch of crushed white grapes and gooseberry. The use of Saison yeast introduces a peppery, spicy undertone that complements the high hop intensity. Deceptively soft on the palate, the beer maintains a firm bitterness and a remarkably dry finish, characteristic of its Belgian-inspired roots. It represents a harmonious marriage of old-world fermentation and new-world hop aromatics.
