This Brett Beer, a collaboration with Zapiain, showcases a sophisticated mixed fermentation profile deepened by aging in Rioja Tempranillo oak barrels. A complex sensory journey begins with vinous red fruit notes of cherry and plum, intertwined with the signature Brettanomyces funk of wet hay and earthy barnyard. The wood imparts structured tannins and a whisper of vanilla, complementing the beer’s bright acidity. Despite its strength, the fermentation results in a remarkably dry finish, where the rustic wild character harmonizes with the sophisticated essence of Spanish red wine and seasoned oak to create a multifaceted, wood-aged experience.
