The base, built on Extra Pale, Chocolate, and Crystalized malts, provides a deep canvas of bittersweet cocoa and rich caramel. The barrel influence is profound, contributing a concentrated dried fruit compote character reminiscent of plums, figs, and dates. This is layered with nuances of black licorice and a vinous, sherry-like sweetness. Despite the high gravity, neutral yeast ensures the complex malt and barrel profiles remain front and center.
